Ingredients

Beef Sausage Mix

  • 1 lb ground beef 80/20 fat ratio for best results
  • 1 tsp salt
  • 1/2 tsp black pepper freshly ground
  • 1 tsp garlic powder
  • 1 tsp paprika smoked for extra flavor
  • 1/2 tsp red pepper flakes optional, for spice
  • 1/4 cup cold water helps bind the meat
  • 6 sausage casings natural or synthetic

Instructions

  • In a mixing bowl, combine ground beef, salt, black pepper, garlic powder, paprika, and red pepper flakes.
  • Add cold water and mix until well combined.
  • Soak sausage casings in warm water for 10 minutes.
  • Using a sausage stuffer, fill the casings with the beef mixture and twist into individual sausages.
  • Refrigerate for at least 2 hours before cooking to let flavors develop.
  • Cook sausages by grilling, pan-frying, or baking until fully cooked (internal temperature of 160°F or 71°C).

Notes

For extra juiciness, you can add a bit of beef fat or suet to the mixture.
