Ingredients

  • 2 boneless skinless chicken breasts, thinly sliced
  • 1 tablespoon olive oil
  • 1 small onion thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 red bell pepper thinly sliced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon Italian seasoning
  • 4 hoagie rolls
  • 4 slices provolone or American cheese
  • 2 tablespoons butter for toasting the bread
  • 1 tablespoon mayonnaise (optional

Instructions

  • Heat olive oil in a skillet over medium heat.
  • Add sliced onions and bell peppers; sauté for 3-5 minutes until soft. Remove from the pan.
  • Season chicken slices with salt, pepper, garlic powder, smoked paprika, and Italian seasoning.
  • In the same skillet, cook chicken for 5-7 minutes, stirring occasionally, until fully cooked.
  • Return the sautéed onions and peppers to the pan with the chicken.
  • Place cheese slices over the chicken and let melt for 1-2 minutes.
  • Butter the hoagie rolls and toast them on a skillet until golden.
  • Spread mayonnaise on the rolls (if using), then add the cheesy chicken and pepper mixture.
  • Serve hot with fries or a side salad.
