Ingredients

  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cups marinara sauce
  • 8 oz penne or rigatoni pasta
  • 2 cups shredded mozzarella cheese
  • 1/2 teaspoon red pepper flakes optional
  • 2 tablespoons fresh basil chopped (for garnish)

Instructions

  • Cook pasta according to package instructions until al dente; drain and set aside.
  • In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  • Coat chicken pieces in the breadcrumb mixture, pressing lightly to adhere.
  • Heat olive oil in a skillet over medium heat.
  • Sauté breaded chicken pieces for 5-7 minutes until golden brown and fully cooked.
  • Pour in marinara sauce and let simmer for 2-3 minutes.
  • Add cooked pasta to the skillet and stir to coat.
  • Sprinkle shredded mozzarella cheese over the top.
  • Cover and let cheese melt for about 5 minutes (or transfer to a baking dish and broil for 3-5 minutes until bubbly).
  • Garnish with fresh basil and serve hot.
